tradition: a sophisticated selection of red and white meat, sausage
and salami specialties, many different kinds of local cheese, the
unmatchable mozzarella and plenty of vegetables, all prepared and
served as naturally as possible, the way tradition requires.

fish caught in this limited sea area is pure and therefore covetous,
the small quantity being sold exclusively on the local market as a
guarantee of freshness, diversity and good quality.

new generation of winegrowers, inspired by millennial vines, create
superb combinations of the ancient and the innovative and have
crafted several superior blends.

chef, bound to the region not only by birth, but also through
passion, is an expert in combining the local components with a new
interpretation and refined preparation. This cooking perfectly fits
the modern food and nutrition guidelines, and still doesn’t neglect
historical roots: it rather emphasizes the ingredients’ finest
properties and old secrets in every creation. So the chef can be
regarded as an artist, and he has one more talent: he considers the
guest the center of his universe.
